This soup is healthy and made in all seasons.
Steps

In big pan boiled vegetable stock add butter, mushrooms, garlic, ginger, vegetable, lemon grass, green chilli and tofu/paneer.

Simmer till the vegetables are tender for five minutes.

Add soya sauce, spring onion, black pepper powder and salt.
- 4
Boil for a few more minutes. Adjust seasoning.

Transfer in soup bowl and add lemon juice.
- 6
Garnish with coriander leaves and serve hot.
