
Roast Chicken With Rosemary And Lemon

Heat oven to 350F.

Season chicken inside and out with salt, pepper, and dried rosemary.

Squeeze lemon on the outside of the chicken and stuff the remains of the lemon along with the onion, garlic, and rosemary sprigs inside the chicken. Tuck the legs inside to keep the stuffings from coming out.

Bake for approximately 1 hour. Hen is done when internal temperature reaches 180°F.

Serve chicken, either one breast or one thigh/drumstick. Skin is optional but not recommended.
