Marilyn is my husband's stepmother, when we went to visit she would always have these mini muffins waiting for us. I couldn't get enough of them!

Ingredients

400*, mini size
  1. 2 cbran (round pellet type)
  2. 2 cboiling water
  3. 1 1/4 cbutter
  4. 3 csugar
  5. 4beaten eggs
  6. 1 Quartbuttermilk
  7. 5 cflour
  8. 5 tspbaking soda
  9. 1 Tbspsalt
  10. 4 cbran (long skinny type)

Cooking Instructions

400*, mini size

    Mix bran (round pellet) and boiling water together, stir, set aside

  2. 2

    Cream together the butter and sugar, add eggs, stir in slowly buttermilk. Once mixed together stir in pellet bran (moist)

  3. 3

    In a separate bowl, mix together the flour, soda, and salt

  4. 4

    Slowly add and stir in the flour mixture to the buttermilk/bran mixture until mixed together. Add the long skinny bran, stir by hand.

    The batter can stay in the fridge for a week or so. If you cook it right away, the bran doesn't get soft, it's best to refrigerate st least a couple hours or overnight and then bake in the morning. Marilyn will bake these in mini muffin pans.
