In a Pan place all the ingredients from peanuts to garlic cloves and dry roaste on medium flame till they are pretty hot to touch

Take care not to burn. Let it cool and then blend to a fine powder

Wash the brinjal make two slits and make sure it should be with out worm. Dip them into the water.

Heat up oil in the pan Saute onions after few seconds add ginger paste and saute well,now add tomatoes Saute all the ingredients well.

Make fine paste of this onion mixture

Now fill the peanut ground powder in the brinjals

Heat up sufficient oil a Pan place all the stuffed brinjals in it cover with a lid Cook until softened.

Now in a separate Pan heat up some oil add cumin seeds red chilli powder, turmeric and salt add the brinjals onion paste, extracted tamarind pulp, and coconut water in it cover the lid and cook for 5 to 7 minutes

Decorate it with coriander leaves, sesame seeds, and almonds.
