Take a deboned pork leg, about 9 pounds. Wash it carefully and pat it dry.

Place it in a large basin or in the roaster and bathe it with the wine and the juice from 2 oranges and 2 lemons. Rub it well to ensure the liquid covers it completely. Add 2 tablespoons of honey mustard and rub again. Continue with the spices, making sure they are evenly distributed.

Cut the potatoes into cubes. Add salt, pepper, juice from one lemon, and a little olive oil, and mix well. Scatter them evenly around the leg in the roaster.

Cut the remaining oranges in half and then each half into quarters. Place them scattered over the leg and the potatoes.

Bake in a preheated oven at 320-355°F (depending on the oven's intensity) with the roaster covered. Every half hour, open and baste the leg with its juices using a brush. At the end, leave it uncovered for 20-30 minutes to brown. It yields about 10 generous servings! Enjoy!
