Ingredients

5 servings
  1. 12Almonds
  2. 12Cashews
  3. 12Pistachios
  4. 1 tbspMelon seeds
  5. 20-25Black Pepper corns
  6. 2 tspPoppy Seeds (white poppy seeds are used for this beverage)
  7. 1 tspFennel seeds
  8. 1/3 cupWater
  9. 1/2 tspCardamom powder
  10. 1 pinchSaffron plus extra for garnish
  11. 3 tbspMilk
  12. 1 tspCornflour
  13. 3 tbspMilk
  14. 4-5 tsp Sweetner of your choice (I had used agave nectar)
  15. 600 mlMilk (dairy or non dairy)

Steps

  1. 1

    Wash and soak the first seven ingredients in one third cup water, over night. Grind the soaked seven ingredients, along with the water, to a smooth paste.

    Soak saffron in a three tablespoons milk. Set aside for atleat an hour. (the longer the better)

  3. 3

    Heat the milk and add the saffron milk to it along with the paste. Stir well and simmer on low heat for 5 – 7 minutes. Stir every now and then.

    Mix the cornflour well in the remaining three tablespoons milk and add gradually to the simmering milk, stirring all the while.

  5. 5

    Add cardamom powder and simmer further for a minute. Switch off the heat and add sweetener of your choice. Serve hot and enjoy!

  6. 6

    NOTE - You can sieve the milk before serving or you can serve it as it is.

  7. 7

    Note - If you like the milk frothy, you can whisk it using a hand whisk or an electric mixer or perhaps an immersion blender.

  8. 8

    Pour in serving glasses and garnish with finely chopped pistachios and slivered almonds and a few threads of saffron (garnish is optional)
