Wash and crosscut each brinjal maximum up to the center level from it's bottom point keeping the stem intact. Put them in water for 2-3 minutes. Drain and place them in a bowl.

Add a pinch of salt, mix well and set aside for 10 minutes.

Heat sufficient oil in a wok and deep fry the brinjals till light brown. Remove and place them on a plate.

Whisk yogurt and salt together in a bowl and keep aside.

Heat 2 tsp oil in a tempering pan. Add cumin seeds, dry chillies, chopped ginger, chopped green chillies and curry leaves. Saute for few seconds and turn off the flame.

Then pour the temperings (tadka) over the yogurt in bowl. Now gently place the fried brinjals in it. Finally add roasted cumin-red chilli powder and cover it.

Thus ready is the tempting dahi baingan to be served.
