With the weather not being great, I wanted to enjoy some hot soup.

Pound the cilantro roots, garlic, and black pepper until fine, then mix with the ground chicken. Season with soy sauce and salt (reserve some for making chicken balls in the soup).

Use the prepared filling to wrap the wontons. For a simple wrap, just place the filling and fold in half. You can fold them into squares or triangles as well.

Blanch the Chinese broccoli and shock it in cold water to keep it bright green. Blanch the wontons, then toss them with vegetable oil and sprinkle with a little fried garlic. Blanch the noodles, toss with oil, and set aside.

Make the soup by adding 2.5 liters of water and chicken bouillon powder (season further with soy sauce and salt to taste). Form the reserved chicken mixture into balls and add to the soup to enhance its sweetness. Once the chicken is cooked, sprinkle with a little sliced green onion.

To serve, place the noodles, blanched Chinese broccoli, and wontons in a bowl. Pour over hot soup and garnish with crispy fried garlic.
