I fondly remember my grandmother preparing rava idly along with tomato chutney when our family gathers! It has an emotional connect with me always.
And this corn puttu is my boy's recent favourite delicacy which I make very often in our home! The flavour and aroma of this puttu will make everyone ask for another serving!

Ingredients

Preparation time : 40 mins Cooking time : 10 mins
  1. Rava idly :
  2. 1/4 cupRoasted sooji
  3. 1 cupCurd
  4. 3 tbspWater
  5. 1generous pinch of Cooking soda
  6. 1green chilli
  7. 1 inchginger
  8. 10-15cashew nuts
  9. 5 tbspghee
  10. As neededSalt
  11. Fortempering :
  12. 1 tspmustard seeds
  13. 1 tspsplit urad dal & Chanadal each
  14. 2 sprigscurry leaves
  15. 1 tbspghee
  16. ForCorn puttu :
  17. 1 cupbroken corn flour
  18. 1/2 cupcoconut (grated)
  19. 1/2 cupsugar
  20. 1/2 cupwater
  21. 2 tbspghee
  22. Pinchelaichi powder

Steps

Preparation time : 40 mins Cooking time : 10 mins
  1. 1

    Rava idly :In a pan add ghee, once heated add mustard, urad dal, Chana dal, curry leaves, chopped green chillies and ginger.

  2. 2

    Mix everything well and then add roasted sooji/rava. Switch off the gas when sooji's colour changes.

  3. 3

    Now transfer the roasted ingredients to a bowl. Add curd, water, cooking soda and salt. Let it rest for 30 mins.

  4. 4

    Now grease idly steamer with ghee and pour the rava idly batter into it. Switch on and keep the flame in high.

  5. 5

    Wait for 10 mins. Now yummy piping hot rava idly is ready. Serve with coconut chutney and tomato chutney.

  6. 6

    Add broken corn flour in a bowl and add water little by little like sprinkling.

  7. 7

    The mixture should hold together and if broken it has to fall apart easily. Add water to the flour until you get this texture.

  8. 8

    Grease the idly steamer with little ghee. Cover it with a cloth and add the puttu mixture and spread it evenly. Now add the grated coconut above it and close the lid.

  9. 9

    Let it steam for 15 minutes. Once done transfer it to a bowl and add sugar, ghee, elaichi powder.

  10. 10

    Mix well and serve hot.
