Child friendly chicken curry

I really want our girls to eat curry as it's one of my favourite dishes to cook at home. So, my rationale behind this recipe was that I will start off with a simple, creamy and fragrant curry that hopefully my two will eat. Then, I can increase the spices and heat each time I cook it until it's the same as the one I cook for us grown ups! The best laid plans and all that..

(You don't need to use pre-cooked chicken - just stir-fry the fresh chicken with the onions etc in between step 2 and 3 until cooked through. I was just using up some chicken left from our roast dinner on Sunday)

Ingredients

20 minutes
2 servings
  1. Cooked chicken breast (I used some leftover meat from out roast dinner last night)
  2. 1garlic clove - finely chopped
  3. 1 cmcube fresh ginger - finely chopped or grated
  4. 1onion - finely chopped
  5. halfmange tout - chopped in
  6. frozen peas, cooked and drained
  7. 100 mlcoconut milk
  8. squeezetomato puree
  9. 1 tspcumin
  10. 1 tspcoriander
  11. 1 tbsp.coconut oil
  12. 1 tbsp.greek yoghurt
  13. 1 tbspmango chutney (optional)

Steps

20 minutes
  1. 1

    Gently fry the onion, garlic and ginger until soft - between 5-10 mins

  2. 2

    Add the spices and fry for 1 minute. Add mange tout and stir well.

  3. 3

    Add the coconut milk, mango chutney and tomato puree. Stir well and simmer for a few minutes Add the chicken, coat with the sauce and cook for 5 minutes.

    Finally, stir in the yoghurt, cooked peas and simmer for a further 3-4 minutes.

    Serve in bowls with brown basmati rice or poppodums and naan.
