Steps

First wash all the veggies.
Rinse it and peel it off.
Now cut it.
Then heat oil in a pan and fry all the veggies till it becomes golden brown in colour.(except tomatoes) - 2
Then keep it aside.
Now heat oil in pan.
Add mustard seeds and let it crackle.
Add red dry chillies.
Add cumin seeds.
Add asafoetida. - 3
Now add desiccated coconut and saute till it becomes golden in colour.
Add onion to it.
Then after add tomatoes.
Add all the above mention masalas and milk in it. - 4
Add 1 glass of water.
Mix it well.
Saute till oil separates from the gravy.
Checkout it should be thick and spicy gravy. - 5
Now add fried veggies to it.
Mix it well.
And let it be on low flame for 2 minutes.So that gravy gets properly mix up with veggies. - 6
Switch off the gas.
And now garnish it with coriander and serve it with phulka rotis,naan or paratha.
