Steps

Firstly boil the rice and keep it separate.

Now take a kadhai, add oil, jeera, sesame seeds and groundnuts. Saute it on low flame.

Now take brinjal, cut it into small pieces. Add the cut brinjals into the kadhai. (Make sure before adding brinjal, the groundnut and masala is fried well) saute it well. Let it cook for 5-10 mins

Now add more salt, vangi bath masala and mix it well. Keep it for 5 mins so that masala is soaked in.

Now add the white rice to the mixture and mix it well. Make sure you add salt if required additionally. Let it cook for 2-3 mins.

Serve it hot. Enjoy
