Steps

In a bowl break eggs,whisk and keep aside

Cut onions and green pepper into cubes or desire shape,separately.

Chopped tomatoes,scoth bonnet and garlic

In a pan add 2tablespoon of oil and saute onions until soft.

Add tomatoes paste,maggi,a pinch of salt,and your spice.

Add a little bit of water,about 1-2tablespoon and allow to boil

About 3-4mins,add eggs over sauce and green pepper

Chop parsley and add(Optional)

Cover pan and simmer for 1minute

Then scramble your eggs carefully.

Cover and allow to simmer for 2 minutes,and you are done.

Serve egg sauce with yam,chips,plantain or anything of your choice.
