Separate the egg yolks from the whites. Beat the yolks with 1/2 cup (100 grams) of sugar, the softened butter, and the almond extract.

Add the melted dark chocolate (melted in a double boiler), cocoa powder, finely chopped almonds, and salt to the mixture.

In a separate bowl, beat the egg whites with the remaining sugar until stiff peaks form. Gently fold the egg whites into the chocolate mixture to create a smooth mousse.

Grease and flour a 9-inch (21 cm) round cake pan with butter and rice flour. Pour in the batter. Bake in a preheated oven at 340°F (170°C) for 30 minutes.

Before serving, generously dust the cake with powdered sugar.
