Ingredients

Serves 8 to 10 servings
  • 9 tablespoonsunsalted butter (125 grams)
  • 2/3 cupgranulated sugar (125 grams)
  • 1 cupblanched almonds (125 grams)
  • 3eggs
  • 1.5 ouncesdark chocolate (40 grams)
  • 2/3 cupunsweetened cocoa powder (65 grams)
  • 1 teaspoonalmond extract
  • 1 pinchsalt
  • Rice flour and butter for greasing a 9-inch (21 cm) cake pan
  • Powdered sugar

  1. 1

    Separate the egg yolks from the whites. Beat the yolks with 1/2 cup (100 grams) of sugar, the softened butter, and the almond extract.

    Add the melted dark chocolate (melted in a double boiler), cocoa powder, finely chopped almonds, and salt to the mixture.

  3. 3

    In a separate bowl, beat the egg whites with the remaining sugar until stiff peaks form. Gently fold the egg whites into the chocolate mixture to create a smooth mousse.

    Grease and flour a 9-inch (21 cm) round cake pan with butter and rice flour. Pour in the batter. Bake in a preheated oven at 340°F (170°C) for 30 minutes.

    Before serving, generously dust the cake with powdered sugar.
