Turkey Spinach Lasagna FUSF

Boil lasagna noodles just 2 minutes under the package instructions and drain. Set aside. Preheat oven to 350.

In large pot, sauté onions and garlic until softened. Add turkey and cook until cooked through. Add half the salt and pepper. Add the spinach and cook just until wilted. Transfer to a bowl and set aside.

To the now empty pot, add butter and melt over medium heat. Add flour and whisk until combined and cook for a few minutes whisking constantly. Add the warm milk and continue whisking. Add nutmeg, the remaining salt and pepper, the mustard and bay leaves. Cook, whisking over low heat for 8 minutes as sauce thickens. Remove the bay leaves. Add 1 cup of Romano and continue whisking.

Start constructing the lasagna in your baking dish. Use a small amount of the cheesy bechamel and add noodles to cover the bottom. Add a smear of bechamel, then the turkey mixture and a sprinkling of Romano and Mozzarella. Continue building the lasagna with additional layers. On the top layer spread the remaining bechamel and sprinkle the Parmesan and Mozzarella.

Bake the lasagna for approximately 40 minutes. Let cool for 10 minutes before slicing.
