Quick Stir-Fried Pho Noodles

This is a dish I make with whatever I have on hand. Quick stir-fried pho noodles are delicious, fast, and convenient using ingredients you already have in your fridge—perfect for switching up your daily meals.
PS: I didn’t buy my ingredients in Vietnam, so the flavors may be a bit different. Adjust the seasoning to your own taste.

Quick Stir-Fried Pho Noodles

Boil the dried pho noodles for 3–5 minutes until they expand. Drain and rinse immediately with cold water. Let them drain, then toss with 1 tablespoon vegetable oil.

Heat a pan over high heat. Add the garlic and shallot, sauté until fragrant and golden. Add the ground beef and stir-fry quickly until cooked. Add the mushrooms, 1 tablespoon oyster sauce, a little sugar, pepper, and seasoning powder. Stir-fry quickly. Once the mushrooms are just cooked, transfer the mixture to a separate bowl.

Using the same pan, heat it again over high heat. Add the noodles and stir-fry quickly, tossing well. Add oyster sauce, fish sauce, and seasoning powder. Stir-fry until the noodles are slightly crispy and golden.

Add the beef and mushroom mixture back to the pan and stir-fry everything together. Adjust seasoning to taste. Add chili powder and sliced scallions, toss well, and remove from heat. Enjoy!
