  1. 3 ccooked Quinoa (1c dry)
  2. 3/4 cdried Fruit - we used a mix of Raisins, Golden Raisins, chopped dried Apricots and dried Currants
  3. 1/4 cPine Nuts, toasted
  4. 1/4 cCilantro, chopped
  5. 1Bell Pepper of any color, diced
  6. 1/4 cLime Juice
  7. 1/4 cEVOO
  8. 1 tspDijon Mustard
  9. 2Garlic Cloves, minced
  10. Salt

    Rinse quinoa under cold water and cook as directed, as needed. Cool

  2. 2

    Toast the pine nuts in the oven, as needed.

  3. 3

    Mix the cooked (and cooled) quinoa, dried fruit, toasted pine nuts, cilantro, and diced bell pepper together in a large bowl.

  4. 4

    In a separate, smaller bowl whisk together the lime juice, olive oil, Dijon mustard, minced garlic cloves, and salt to taste for the dressing.

  5. 5

    Pour the dressing over the salad and mix thoroughly.
    Can be stored in airtight container in the fridge
