Spicy Cheese Sauce Mixed Noodles

THE STORY OF SPICY CHEESE SAUCE MIXED NOODLES
** Our group - the oldest is Long, a manly guy whose dad works with electrical wires, then there's me, Ky, whose mom sells drinks on the street, followed by Phuong, whose mom runs a food stall at the alley's entrance, and the youngest is Ong, whose family owns an electronics store. The names say it all, except for Ong, who is as thin as a stick but always complains about being fat, so we nicknamed her Ong. We’ve been friends since we were kids, brought together by our love for electronics.
** Back then, food was just enough to eat, with some days having vegetables and others meat, so playing video games was a luxury. Each of us got 2000₫ every morning (like a ration, haha). That was our only "income." To satisfy our gaming passion, we had to save our morning money. We loved playing so much that we skipped meals, and we were all skinny like sticks, always getting scolded. So, in our hardship, we came up with a clever plan to buy 2 packs of instant noodles to mix and share. It wasn't delicious, but it left us with extra money for games. Truly, talent knows no age, and our spending plan was perfect! 😂
** We were so close that one of us could skip breakfast for days to treat the others to a few hours of gaming without any complaints. Or when one of us was busy, the remaining three would only play simple games like hopscotch, marbles, jump rope, or rubber band flicking. :)))

    * One calm, cloudy day, the electronics store owner upset Long, so he didn't want to play anymore. He said he hated the owner and wouldn't play. No matter what we said, he wouldn't listen. That day, Ong was the saddest, feeling down. Long seemed less manly that day, but he had his reasons, what could we do...

    * Since Long left, the three of us continued making mixed noodles, playing marbles, jump rope, and hopscotch, so we had extra money and didn't know what to do with it. We decided to buy some meat and sauce to cook something delicious to tempt Long to play with us again, haha... He would be tempted and come over. Our group is quick to anger but quick to forget and very lovable. Oh well, there are many electronics stores, but this one has the most memories, the most cherished, especially with Ong, who is always complaining about being fat, right Long? 😉

    Haha... Ky is such a fitting name. After all the stories, let's start the beloved mixed noodle recipe. Eat mixed noodles to save money for a car, everyone 😜 Let's get started! First, marinate the ground meat with a little salt, sugar, and pepper for 20 minutes. Sauté garlic with a little oil, then add the ground meat and stir-fry briefly. Next, add 1 1/2 cups of water to the pot and bring to a boil, then reduce the heat and simmer for another 20 minutes. Skim off any foam while simmering. Remember to leave the lid open so the steam can drift over to Long's house 😂

    Next, add 1 pack of instant noodles to the pot. The noodles will absorb some water and release a salty flavor.

    Once the noodles are just soft, remove the noodles and ground meat to a bowl, leaving a little ground meat in the broth. If you like softer noodles, leave them longer. Personally, I like the noodles just soft on the outside, with a slight crunch inside. For each pack of noodles, add 3 tablespoons of spicy cheese sauce and 1 teaspoon of sesame oil to the bowl and mix well. (You can use the dried onions and meat from the noodle pack but don't use the seasoning packet).

    You can find Kewpie spicy cheese sauce at supermarkets or grocery stores. It's quite delicious and widely available.

    Next, poach 2 eggs to serve with the noodles. You can search for "Poached Eggs" in my kitchen for the method.

    Reheat the broth, season to taste. Add some chopped green onions and ground pepper to the broth and mixed noodles.
