Wash the baigan.and drain the water.

Heat the oil in a pan and fry the brinjals till light brown and keep aside. Mean while fry the chopped onion bay leaves,add turmeric powder garlic and ginger paste.stir till the raw smell goes away add tomato puree at the sametime mix all the spices and saute for a minute. Add the salt cook till the tomato become soft and thick. And then mix the fried brinjals and cook for sometime.

Add 1cup of water and cook for a min to make the gravy thick. As soon as the gravy become thick and consistent. Switch off the flame and garnish it with fresh coriander leaves.

Serve it with rice and papad.
