  1. 4large onions
  2. 4 tablespoonscooked rice
  3. 4 teaspoonfinely chopped fresh parsley, plus extra for garnish
  4. to tasteSalt and pepper
  5. 2 tablespoonsolive oil
  6. 1 tablespoonwhite wine to moisten

  1. 1

    Preheat the oven to 180°C

  2. 2

    Cut a slice from the top of each onion and scoop out the centre to leave a fairly thick shell.

  3. 3

    Combine all the remaining ingredients, moistening with enough wine to mix well

  4. 4

    Fill the onions and bake in the oven for 45 minutes. Serve garnished with extra parsley
