Ingredients

30 mins
8 servings
  • 8lamb steaks roughly 225 g each
  • Grated rind and juice of one large lemon
  • 2 clovesgarlic, peeled and crushed
  • 2spring onions finely chopped
  • 2 cupsfinely chopped fresh mint leaves, plus an extra leaves the garnish
  • 4 tablespoonsextra virgin olive oil, salt and black pepper to taste

  1. 1

    Make a marinade by mixing all the ingredients except that the lamb and seasoning to taste. Then place the lamb steaks into a shallow dish and cover with a marinade. Refrigerate overnight

  2. 2

    Grilled lamb under high heat until just cooked basting with the marinade occasionally during cooking. Turn once halfway through cooking

  3. 3

    Garnish with mint leaves.
