Combine semolina,curd,salt,1 tbsp oil,and 1/2 cup water in a bowl

Cover and keep aside for 30 minutes

Make tomato paste,and palak paste

Blanch palak in hot water for 5 minutes, remove from hot water and soak on ice cold water for 1 minute,mix in grinder and make fine paste

Just before steaming the dhokla, add fruit salt and 2 tsp of water,when the bubbles form,mix gently

Divide the batter into three parts

Add tomato paste in one batter,spinach paste in another

Third one remain white

Grease three thali or pot and pour the batter immediately in to greased Thali

Steam in a steamer for 15 minutes.keep aside

Heat the remaining oil in a pan

Add mustard seed,curry patta and sesame seeds, green chilli,and saute for 30 second on medium flame

Add water,salt,sugar and lemon juice

Remove from heat

Pour the tempering over each dhokla layer

Time to assemble all three

Place green layer as bottom layer, spread green chutney on it

Cover with another layer

Spread grated paneer on it

Cover with third and final layer

Garnish shredded coconut, chopped coriander leaves and curry patta,cut and serve with chutney and sauce
