Ingredients

  • Ingredients for 5 servings
  • 14 ozcherry tomatoes (about 400 grams)
  • 1.1 lbstube-shaped pasta (maccheroni, ziti, or paccheri) (about 500 grams)
  • 4-5round purple eggplants
  • 2 ozsalted ricotta cheese (about 60 grams)
  • 3 clovesgarlic
  • Fresh basil
  • Red pepper flakes
  • Salt and black pepper

Steps

    In a saucepan, sauté the crushed garlic and red pepper flakes in olive oil. Add the cherry tomatoes, chopped into pieces, season with salt, and add fresh basil.

    Cut the eggplants into cubes and mix them into the sauce. Cook until the eggplants are tender.

    Meanwhile, cut one eggplant into cubes and fry them in oil until golden brown.

    Cook the pasta al dente, then toss with the prepared sauce. To serve, top with the fried eggplant cubes and sprinkle with grated salted ricotta cheese.
