Ingredients

  1. 4 cupsall-purpose flour (about 500 grams)
  2. 4large eggs
  3. 2 1/2 tablespoonsgranulated sugar (about 30 grams)
  4. Grated zest of 1 lemon
  5. 5 1/2 tablespoonsunsalted butter (about 80 grams)
  6. 2 tablespoonsrum, Strega, or anise liqueur (about 30 grams), or a mix of these
  7. 1 1/2 cupswildflower or acacia honey (about 450 grams)
  8. 1 pinchsalt
  9. Vegetable oil (such as peanut oil) for frying
  10. Colored sprinkles and candied orange peel for decorating

Steps

  1. 1

    Mix all the ingredients by hand or with a stand mixer until you have a smooth, firm dough. Let it rest for about 30 minutes.

    After resting, cut the dough into small pieces to form little dumplings.

  3. 3

    Deep-fry the pieces in a large pot with vegetable oil until golden brown.

  4. 4

    Drain well and let cool on paper towels.

  5. 5

    Once cooled, melt the honey in a pan and add the fried dough pieces, stirring to coat them evenly.

  6. 6

    Arrange the struffoli on a serving plate or in small paper cups and decorate with colored sprinkles and candied orange peel as desired.
