Ingredients

  1. 2fresh octopuses (about 2.9 lbs)
  2. pepper mix
  3. 2bay leaves
  4. 1/4 cupolive oil
  5. 2 tablespoonsred wine vinegar
  6. oregano
  7. parsley, green onion optional for garnish

Steps

  1. 1

    Place the octopuses in a baking dish, not too large, along with the bay leaves and peppercorns. Cover with aluminum foil and bake at 350°F for about 1.5 hours, until tender. It releases a lot of juices, which can be used to make a sauce for pasta by adding wine, oil, and any spices and herbs you like.

    Remove from the baking dish and drizzle with the oil and vinegar, oregano, and, if desired, finely chopped parsley and green onion.
