Rhubarb Compote

I love the flavour of the sweet and tart rhubarb. It is such an underrated fruit that yields so much flavour. The ginger also adds a nice spice to it. The rhubarb I used wasn’t so pink, but if you are able to get definitely give it a try!

Wash the rhubarb and trim the ends

Cut the rhubarb into 1 cm slices
- 3
Place the slices into a pot and add the sugar to it. Let it rest for about 15 minutes so that the sugar releases the juice of the rhubarb

Peel and grate the ginger and set aside
- 5
Heat the rhubarb sugar mixture until it summers for 5-7 minutes

Remove from heat and stir in the ginger

Enjoy it either on it's own as a dessert or use as a topping over creamy items such as yoghurt or ice cream
