Ingredients

  1. For the pitas:
  2. 400 gramswhole wheat flour
  3. 2.5 gramsgrams salt
  4. 2.5 gramssugar
  5. 3.5 gramsdry activated yeast
  6. as neededCold water to knead the dough
  7. 1 teaspoonoil
  8. For the vegetable stuffing:
  9. 500 gramsmixed boiled vegetables:finely chopped carrots, sweet corn, green peas
  10. 50 gramschopped spinach leaves
  11. 50 gramschopped coriander leaves
  12. 1large tomato chopped finely
  13. 1large onion chopped finely
  14. 1 teaspoongarlic powder
  15. to tasteSalt
  16. to tasteCrushed black pepper
  17. 1 teaspoonRed chilli flakes to season
  18. 1/2Juice of a lemon
  19. 100 gramscurd

Steps

    For the pita:In a large bowl, combine flour, salt and sugar

  2. 2

    Add the yeast and cold water to knead a stiff but pliable dough

  3. 3

    After kneading, knead for a minute post adding the oil

  4. 4

    Keep the dough covered in a warm place for 1 hour

  5. 5

    For the stuffing, combine the vegetables and greens in a bowl

  6. 6

    Add the chopped onion and tomato

  7. 7

    Add the garlic powder, pepper and salt

  8. 8

    Add the chilli flakes and lemon juice

  9. 9

    Mix well after adding the curd and keep the bowl covered

  10. 10

    Post resting, divide the dough into equal sized dough balls

  11. 11

    Using some flour dusting, roll each into medium sized discs (not very thin)

  12. 12

    Cook the rolled discs on a non stick pan by flipping over once brown spots appear

  13. 13

    Once done, cut each into half and create a space on each side for adding the stuffing

  14. 14

    Add the prepared vegetable stuffing and serve immediately
