Ragi Dosa Sandwich Pizza

This flavourful pizza Ragi Dosa sandwich is very healthy and nutritious.
I have used Ragi grains and udad dal to prepare dosa batter, then fermented after grinding. I stored in an airtight container in refridgerator.
Hence, Dosa batter can be prepared before hand and stored in refridgerator for 5-8 days. This makes office and school lunch box preparation easy and less time consuming.
I also make masala dosa, uttapams and idlis with this same batter.

Steps

Wash ragi several times to remove impurities. Also wash dals and rice.

In a large vessel add ragi, udad dal, moong dal, rice and fenugreek seeds. Pour enough water and let them soak for 2-3hours.

Grind in to smooth paste without adding too much water

Cover and let it ferment for 6-8 hours according to the temperature of where you leave. The batter should puff up to double the quantity.

Add salt and oil and some water, mix the batter well. The batter is ready for making idlis, dosas or uttapams.

Vegetable filling; boil potatoes, green peas and corn. Add all the spices and mash. Set aside.

Green chutney: add all the inredients and grind to smooth paste

White chutney; in a grinder add all ingredients and make a smooth paste

Red tomato chutney; Heat a pan add oil and chopped garlic, onion and green chillies, saute till onion becomes light brown. Add chopped tomatoes and cook until tomatoes are soft. Add coriander leaves. Cool and make a paste.

Place a dosa griddle on the stove. Wipe it with a drop of oil on tissue paper. The griddle should not get very hot, or else the batter will stick to tawa and not spread evenly.

Take a big dal-spoon full of batter and pour in the centre of griddle. Spread evenly with the spoon.

Sprinkle some melted butter or ghee and let roast on low flame for crunchy dosas. Then apply green chutney on one dosa and tomato sauce or red tomato chutney on second dosa

Sprinkle pizza seasoning over the dosa with red chutney. Spread the potatoes.

Sprinkle grated cheese over the potatoes filling

Cover the stuffed dosa with the green chutney
- 16
Slice with pizza cutter. Serve with chutney
