Soak the rice for 10 mins and drain the water.Keep it aside.

Now heat a pan.Add dhaniya,bay leaf,cloves,pepper,jeera,star anise and fry on low heat.Keep it aside.Now add 3 tsp grated coconut in pan and fry a bit.Fry red chillies also.Allow it to cool.

Grind all the above ingredients to a coarse powder.

In a pressure cooker pour 4 to 5 tbsp oil.Add mustard seeds,jeera,hing and green chillies.

Add chopped (long shaped) thondli.Add turmeric powder and about 2tbsp grated coconut, little fresh coriander leaves and fresh green peas.Fry it.

Now add 3 tbsp grinded masala.Add rice and fry it for 2 to 3 mins gently.As rice will tend to break.

Now add water.Here my rice is old so i used 5 cups of water for 2cups rice.You can use less or 4 cups water according to the rice.Add salt as per your taste.

Now close the lid and pressure cook on low flame for 3 whistles.

After the pressure releases remove the lid and gently mix the rice.

Authentic Masale bath is ready to eat.Serve with lemon.
