Adai is the traditional dosa made of spices and lentils in Tamilnadu. The crispy, hot and spicy dosa with coconut chutney or Aviyal makes the dinner very special..
Steps

Wash the rice and dals well and soak in water with red chillies for 3 hours.

Add salt and grind them all together to coarse mixture.

Add chopped curry leaves and asafoetida powder. MIx well.

Heat a dosa tawa. If it is a cast iron tawa, the taste and texture will be perfect.

Grease the tawa with half teaspoon oil.
- 6
Pour two ladles of batter and spread to a dosa. make a hole in the middle.

Drizzle a teaspoon of oil around and in the middle.

Cook to crisp on the edges and golden brown on both the sides.
