Steps

Place 3/4 cup water in a pan and bring to the boil, add quinoa, cover tightly and lower heat to cook for 15 minutes.

Cut up broccoli to size of rice, food processor can be used.

When quinoa cooked add in broccoli and leave to stand for 1 minute before transferring to large bowl to cool

When quinoa reaches room temperature add parsley, chickpeas, cucumber, tomato and green onion. Toss to mix.

Drizzle over oil and lemon.

Can be kept in fridge for up to 3 days.
