In India strawberry is rare and expensive. My father brought home some tart strawberry that I had to use. I checked out a few recipes and I wasn't sure I wanted to invest so much in tart strawberries. I adapted my normal muffin recipe and it came out great.

Ingredients

12 servings
  1. 300 gmAll purpose flour
  2. 200 gmstrawberry
  3. 180 gmpowdered sugar
  4. 80 mlcanola oil
  5. 2 tspvanilla essence
  6. 2 tspbaking powder
  7. 1 tspsalt
  8. 2eggs

Steps

  1. 1

    Hull and finely chop the strawberries and macerate in four teaspoon of powdered sugar

  2. 2

    Mix flour, salt and baking powder

  3. 3

    Beat sugar and oil. Add egg one by one and beat. Add vanilla essence.

  4. 4

    Mix in the flour mixture by cut and fold method

  5. 5

    Add the strawberries to the cake mixture

  6. 6

    Pour in muffin molds and bake for 25 minutes at 190 Celsius
