These dumplings are delicious dipped in soy sauce or sweet and spicy fish sauce.

Mix the all-purpose flour with water to form a dough. Refrigerate for 30 minutes. Roll out the dough thinly and use the rim of a bowl to cut out circles for the dumpling wrappers. Dust each wrapper with flour or separate layers with plastic wrap to prevent sticking. Then refrigerate the wrappers.

Combine the ground meat, crumbled tofu, chopped cabbage, chopped garlic chives, minced ginger, minced garlic, black pepper, and seasonings. Mix well until the filling is smooth and well combined.

Fill and shape the dumplings. You can find folding techniques on YouTube. Boil, steam, or pan-fry the dumplings as you like. If pan-frying, avoid round shapes. Drop the dumplings into boiling water and cook for about 3–4 minutes until done. Serve with soy sauce or sweet and spicy fish sauce for dipping.
