Bring a pot of water to a boil, add salt, and cook the pasta.

It's very important not to add the water to the cheese right away. Wait until the pasta releases its starch—this is the secret to getting a creamy sauce.

Drain the pasta and quickly toss it with the cheese mixture. If needed, add more cooking water if the sauce is too thick and not creamy enough.
