Easy Greek Spinach and Feta Pie (Spanakopita) with Batter Crust

Prepare the filling. Place the spinach in a pot over low heat to thaw if you haven't already thawed it. Increase the heat and cook uncovered until the liquid evaporates. Add olive oil and finely chopped green onions, then sauté well. Season with salt and pepper, then remove from heat. The mixture should be dry with no excess liquid.

Prepare the batter. In a large bowl, combine the flour, salt, and baking powder. Add the olive oil and as much water as needed to make a thick batter (about 1 liter).

Grease a baking pan about 15 inches (38 cm) in diameter. Pour a little more than half of the batter into the pan. Spread the spinach mixture evenly over the batter and crumble the feta cheese on top by hand.

Add a little water to the remaining batter to thin it out, then pour it over the filling to cover everything. Drizzle with a little olive oil and sprinkle with sesame seeds.

Bake the pie in a preheated oven at 400°F (200°C) for about 1 hour, until golden brown.
