Soak chana dal into water for 5-6 hours. Grind soaked chana dal with green chillies, ginger, garlic cloves, citric acid and required water. Add water little by little and grind it and make thick batter. Then add salt, asafoetida and turmeric powder and mix well. Batter is ready.

Keep water to boil in steamer. Grease deep bottom mould or thali with oil. Now add sodabicarb into batter and mix well. Pour into greased mould or thali and put into steamer. Cover with lid and steam for 25-30 minutes. Let it cool down at room temperature. Then cut into big pieces and grate with grater or scrumble with hand.

In a pan heat oil. Add mustard seeds. When crackles add sesame seeds and slit green chillies. Add chopped cashew nuts and raisins. Saute for few seconds. Add water and sugar. When water comes to boil add prepared khamni and mix it. Add chopped coriander leaves and lemon juice. Adjust salt and mix well.

At the time of serving mix pomegranate seeds and sev as per your taste. Amiri khamni is ready to serve.
