Ingredients

1 serving
  • 1tomato (to be stuffed)
  • 1/2tomato (diced, for the salad)
  • 1/2cucumber (diced)
  • Finely chopped onion (optional)
  • 3olives (halved and pitted)
  • 1/2red or green bell pepper (diced)
  • 1 3/4 ozfeta cheese (50 grams)
  • 1 tablespooncapers
  • 1 pinchdried oregano
  • Salt
  • Olive oil

Steps

10 minutes
  1. 1

    Wash and dry the tomato, then cut a circular slice around the stem at the bottom.

  2. 2

    Carefully cut the tomato into eight wedges, making sure not to cut all the way through—stop about two-thirds of the way down.

  3. 3

    Add the diced vegetables, all the ingredients with a sprinkle of salt, and the feta cheese into the center of the tomato.

    Sprinkle oregano and drizzle olive oil on top.
