Ingredients

40 minutes
3-4 people
  • 1 cupold long grain basmati rice
  • 3 tbspoil
  • 2onions sliced
  • to tasteSalt
  • 2 tbspCoriander chopped
  • 2 tbspmint leaves chopped
  • For paneer marination
  • 1 cuppaneer cut into cubes
  • 2 tbspghee
  • 1 tbspginger garlic paste
  • 1 tbspbiryani masala
  • 1/2 cupyogurt
  • 1/2 tbspturmeric powder
  • 1/2 tbspred chilli powder
  • as neededSalt
  • 2 tbspChopped mint and coriander leaves
  • 1Bay leaf
  • 3-4green cardomom
  • 1star anise
  • 2 inchpiece of cinnamon
  • 1/2 tbspcumin
  • 3-4cloves
  • 1black cardomom
  • 1 strandmace
  • 1 tbspkewara water
  • Garnishing
  • as neededSome paneer cubes
  • 1 eachGreen and red bell peppers long cut
  • as neededOnion rings

Steps

40 minutes
  1. 1

    Heat oil in a heavy bottomed pan. Fry long cut onions, green and red bell peppers and paneer cubes in it. Set them aside.

    Soak rice for 30 minutes. After that strain it.

  3. 3

    Marinate paneer cubes with fried onions and the ingredients for marination. Keep aside.

  4. 4

    Heat water in a pan. Put 1 tbsp oil in it. When the water boils put rice in it and cook till half done. Strain the rice and keep aside.

  5. 5

    Heat ghee in a heavy bottomed pan. Arrange half paneer marinade in the bottom then layer half cooked rice. level it. repeat the process.

  6. 6

    Now sprinkle chopped mint and coriander leaves, fried onions, capsicum and kewara water.

  7. 7

    Seal it with a foil. Put the lid over it.

  8. 8

    Heat an old tava(griddle). Put biryani pot over it and cook for 5 minutes on high flame then reduce the flame to medium and cook for 10 minutes.

  9. 9

    Switch off the gas. Let it rest for 15-20 minutes.

    Garnish with fried paneer,red and green bell peppers and onion rings.

    Veg paneer biryani is ready. Serve hot with any raita of your choice.
