Many times I ate cold take-out sesame noodles at my neighbors’ David and David, so I recently tried to make the sauce. Generally I use the sauce to accompany zucchini noodles (cold and raw) or spaghetti squash (cooked and warm).

Ingredients

15 minutes
2 people
  1. 3medium zucchini or 2 large ones
  2. 1 teaspoonminced fresh ginger
  3. 1small minced garlic clove
  4. 1/4 teaspoonchili powder
  5. 3 tablespoonssalted peanut butter
  6. 1 tablespoontahini
  7. 4 teaspoonssoy sauce
  8. 1 tablespoonsesame oil
  9. 1 tablespoonhoney
  10. 1 tablespoonrice vinegar
  11. Optional garnishes: peanuts, cilantro, soybean sprouts

Cooking Instructions

15 minutes
  1. 1

    Wash and dry zucchini.

  2. 2

    Spiralize zucchini. You can replace it with baked spaghetti squash or cooled cooked noodles.

  3. 3

    Combine rest of ingredients in a bowl.

  4. 4

    Add zucchini and mix.

  5. 5

    Served garnished with peanuts and cilantro leaves.
