Ingredients

  • 2 lbItalian sausage
  • 1 bagmisto alla griglia eggplant, zucchini, peppers frozen
  • 6 clovesgarlic
  • 1/3 cuppine nuts
  • 1small bag of arugula
  • 1 cupshaved Parmesan cheese
  • 3 tbsolive oil

Steps

  1. 1

    Sautee sausage with olive oil and garlic. Once sausage is cooked add pine nuts until lightly toasted.

  2. 2

    Microwave vegetables for eight minutes and add to cooked sausage.

  3. 3

    Add arugula and cook until wilted. Turn off heat. Add Parmesan.

  4. 4

    Serve as is or over pasta.
