Palm oil stew with rice
One of my favorite stew for rice
Steps
- 1
Prepare your meat and set aside,
- 2
Blend your tomatoes, onion, pepper(rodo), bell pepper(Tatars). Perboil and set aside
- 3
Bleach your palmoil till it changes colour(making sure your windows and kitchen door are widely open because of flames)
- 4
Remove pot from heat and add onions(this time I take my pot to the back to avoid excessive coughing)
- 5
Divide the oil into two, set one part aside and return the other back on fire. Fry your boiled egg, meat/ intestine, pomo with the other part of the bleached oil on fire(not deep frying)
- 6
Add your parboiled tomatoes sauce and continue frying, add meat stock and seasoning. Taste for salt add little if necessary.
- 7
Add the set aside bleached palmoil and allow all to fry for few more minutes.
- 8
Yes your stew is ready. Boil your rice and enjoy
