Onset of summers invites the fresh raw cashews. This is the season of raw or unprocessed cashew here in Andhra pradesh.It has to be soaked for 6 to 8 hours in lots of water to swell and deskin easily. Once deskinned wash and rinse well with warm water and salt. This removes the raw smell and any skin left. Simple spices from our kitchen shelves give it a wonderful taste. So less spices more taste. Lots of onions enhances the taste and texture of the curry.

Ingredients

8 servings
  • 750 gramsunprocessed cashews
  • 6-8medium Onions sliced fine
  • 2broken hot red dried chillies
  • 2 tbspginger garlic paste
  • 3 tspred chilli powder
  • 1 tspgaram masala powder
  • 1/2 tspTurmeric Powder
  • 2-3 sprigscurry leaves
  • 1 tspmustard seeds
  • to tasteSalt
  • 4-5 cupswater
  • 3 tbspoil

Steps

30 minutes
  1. 1

    Soak cashews overnight in sufficient water. Deskin next day applying a little oil to both palms. Wash the deskinned cashews in running water 2 to 3 times. Rinse lastly with warm water and salt.

    Heat oil. Add mustard seeds and let it splutter. Add the red chillies then the chopped onions then the curry leaves. Saute till transparent.

    Now add the ginger garlic paste and saute till raw smell goes away.

    Add the spice powder and salt. Add the cashews and mix.

    Add the water,cover and simmer till cooked. Check for seasoning. Add salt or spices if required.

    Keep checking in between for doneness. It has to have a soft bite.If they are over cooked they will be soft and smudgy. So keep checking.

    Try cutting with a blunt spoon. Should easily break. Then it is ready.

    Serve tasty delicious raw cashews curry with hot steamed rice or pulav.
