Ingredients

  • 4small brains (weight 450 to 460 grams)
  • 3 cupswater
  • 1 tspsalt
  • These ingredients r for deveined the brain
  • For cook the brain we need
  • 4 tbspoil,
  • 1/2 cupOil
  • 2medium onions
  • 1 tbspginger garlic paste
  • 2tomatoes medium
  • 1/2 tspturmeric powder
  • 1 tspsalt
  • 1 tbspred chilli flakes
  • 1 tbspdhania powder
  • 1/2 tspzeera
  • 1 tspdry coriander
  • 2 tbspyoughurt
  • 1/2 tspkusuri methi
  • Ginger Julian cut
  • Fresh coriander n green chillies for garnish

Steps

  1. 1

    De - vein the brains : this process is very important for perfect taste.
    In skillet add water with, turmeric powder, bring it to boil now add brains

    Boil for 5 minutes
    After 5 minutes remove the brains from water. And de - vein the brains
    Keep aside

  2. 2

    Heat up nonstick pan add oil,
    Heat oil, then add onions (finely chopped) and cook till nice golden in colour, now add g.g paste, sauthe little then add tomatoes cut into sliced, add turmeric powder, salt, (or to taste), red chilli flakes, dhania powder, and little water, let it cook till masala and tomatoes cooked n combine properly and oil separates,

    Now add de - vein brains
    This time u have to cook like a pro. And stir like khata khat,
    When all things combine very nicely add roasted n crushed cumin (zeera), roasted n crushed coriander, kusuri methi, and thick and well beaten youghurt, mix very well, put on dum for 5 minutes

  4. 4

    Garnish with ginger, fresh coriander...... and green chillies, serve hot with lemon wedges, raita and naan.
