Ingredients

  1. For Crust
  2. 2 cupscocoa krispies cereal
  3. 6 tablespoonscreamy peanut butter
  4. 1/3 cupsemisweet chocolate chips
  5. For Ice Cream Filling
  6. 1 quartvanilla ice cream
  7. 1 quartpeanut butter ice cream
  8. For Whipped CreamTopping
  9. 1 cupcold heavy whipping cream
  10. 3 tablespoonsconfectioner's sugar
  11. 1 teaspoonvanilla extract
  12. Garnish

Cooking Instructions

    Make crust

    Spray 9 inch springform pan with non stick spray

  3. 3

    Place cocoa krispies in a bowl

  4. 4

    Melt peanuut butter and chocolate chips either on stove top or in microwave until smooth

  5. 5

    Pour chocolate peanut butter mixture over cocoa krispies and gently coat cereal

  6. 6

    When cool enough to handle press into prepared oan and freeze

  7. 7

    Prepare Ice Cream Filling

    Soften vanilla ice cream just until spreadable. Spread in frozen crust, refreeze

    Soften peanut butter ice cream just until spreadable and spread over frozen vanilla

    Freeze until hard

    Make Whipped Cream Topping

    Beat cream until it has soft peaks

  14. 14

    Add confectioner's sugar and vanilla and beat until it holds it shape

    Remove sides of springform pan

    Spread whipped cream on top of peanut butter layer

  17. 17

    Garnish with the Creamy Caramel Chocolate Crispy Bark and return to freezer intil frozen

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US.
