Wash the plums and remove the pits.

Place them in a pot together with the water and boil for about 40 minutes until tender (if they are ripe they require less time).

If you want your jam to have little pieces of fruit, let it as it is, in any other case, blend part of the fruits all the whole quantity in a food processor until smooth, then add the sugar.

Boil the jam over strong heat stirring with a wooden spoon so that it doesn't stick until it sets (take set that it doesn't set too much) and towards the end add the extract and the lemon juice.

Remove from heat and skim off the occasional foam that has formed on the surface.

As soon as it cools store in sterilized jars.

It keeps in the fridge for 1 year.
