Ingredients

6-8 hours
5 servings
  1. 1 poundboneless skinless chicken breasts
  2. 2 cupschopped vegetables (onions, celery, carrots)
  3. 2 tspdried basil
  4. 2 tspitalian seasoning
  5. 1 tsppoultry seasoning
  6. 1/2 tspsalt
  7. 4 cupschicken broth
  8. 2 tbspcornstarch dissolved in 2 tsp water
  9. 2 (12 oz)cans evaporated milk
  10. 2 (1 lb)packages of mini potato gnocchi
  11. 6 slicesbacon
  12. 2-3 clovesgarlic
  13. 5 ozfresh baby spinach

Steps

6-8 hours
  1. 1

    Place chicken, vegetables, basil, italian seasoning, poultry seasoning, salt, and broth in a crock pot on high 4-5 hours, on low for 6-8 hours.

  2. 2

    Shred the chicken, add cornstarch mixture, evaporated milk, and Gnocchi. Stir and replace cover.

  3. 3

    Cut bacon into small pieces and fry untill crispy. drain bacon grease from pan leaving about 2 tsp, saute minced garlic, and spinach until wilted. Add to Crock-Pot.

  4. 4

    Season with salt and pepper to taste and serve.
