Ingredients

15 minutes
  1. 4small raw zucchini
  2. 3/4 cupblanched, toasted almonds (about 100 grams)
  3. About 40 fresh basil leaves
  4. 2 tablespoonsgrated Parmesan cheese
  5. Salt and pepper
  6. 3 1/2 tablespoonsextra virgin olive oil (50 ml)

Steps

15 minutes
  1. 1

    Wash the zucchini, trim the ends, and cut into chunks.

  2. 2

    Place the zucchini, olive oil, almonds, and basil in a blender.

  3. 3

    Blend until smooth and creamy, then add the Parmesan cheese. Season with salt and pepper to taste.

  4. 4

    Transfer to sterilized jars.
