Ingredients

60 minutes
Serves 5 servings
  1. 2.2 lbspork leg (you can also use pork shoulder or butt), 2.2 lbs banh hoi (Vietnamese woven rice vermicelli)
  2. Cucumber, mixed fresh herbs, 1 small bunch of garlic chives
  3. 3 tablespoonssoy sauce, 2 tablespoons oyster sauce, 2 tablespoons sugar, 2 tablespoons honey, 1 tablespoon seasoning powder, 1 tablespoon cooking wine (optional), 2 tablespoons char siu marinade powder (required)
  4. 2 cupsfresh coconut water (about 480 ml), minced garlic, cooking oil

    Wash the pork and slice it into thin strips. Marinate with all the seasonings listed above and minced garlic. Let it sit for 30 minutes to absorb the flavors.

    Place the pork in a dry skillet over low heat and cook until the meat firms up. Pour in the coconut water, cover, and simmer until the sauce thickens.

    Wash and finely chop the garlic chives. Heat cooking oil, add the chives, stir quickly, then remove from heat. Once the pork has cooled, slice it thinly.

    Arrange the banh hoi on a plate, spread the garlic chives on top, and serve with the pork and fresh herbs. Use the pork braising sauce as a dipping sauce, or mix it with soy sauce, garlic, and chili.

    Tip: If you want the pork to have a bright red color like at restaurants, you can add food coloring. Here, I did not use any coloring.
