Black rice salad

This is my first time to eat black rice (also the first time that I see black rice :)), I made some research and it is reported to be nutritive, having less carb, more fiber and protein. The black rice itself is tasty more than normal rice.

This is my first time to eat black rice (also the first time that I see black rice :)), I made some research and it is reported to be nutritive, having less carb, more fiber and protein. The black rice itself is tasty more than normal rice.

Cook rice with a boiling salted water until tented (around 40 minutes). Drain the cooking water, spread the rice in a plate and let it cool. Meanwhile, slice the tomatoes and reserve, also, chop the cilantro and reserve.

Prepare the dressing, in a blender, put the walnut, kosher salt and pepper, olive oil, cider vinegar, honey and mix.

In a large bowl, mix the rice, pumpkin seeds, tomatoes, fresh cilantro and the dressing together.
